To preserve the intense fruit flavors and aromatics of the variety, this Roussanne was fermented entirely in stainless steel. Hand-picked in the early morning hours of beginning through mid September, the cold grapes were pressed immediately after harvest. After settling, the juice underwent a 4-6 week cold fermentation.
