Growing Conditions

The Zenaida Estate Vineyard is located on the western edge of the Paso Robles AVA
near the base of the Santa Lucia Mountains in the Templeton Gap District. We utilize
sustainable agriculture practices to produce wines that are predominantly fruit
forward and express our unique west side terroir.

Harvest

In mid-summer the vines are
“green thinned”. Green clusters are cut from the vine, leaving just one cluster per
shoot in order to concentrate the plants energy into fewer clusters and improving
wine quality. The Cabernet Sauvignon estate fruit was hand harvested, de-stemmed,
and allowed to cold soak 48 hours before fermenting in small 200- gallon open top
lots. During the fermentation process the must was manually punched down twice
daily and given specifically timed de le stage for approximately 30 days then gently
pressed.

Aging

The wine was then aged in 100% select fine grain French oak for 18
months.
