Elegant and expressive, the LXV Rose of Cabernet Franc dances with variety of flavors and textures of food.
On one hand the fruit set is bright and vibrant and on the other, it takes on a fresh baked pastry aspect. This warming and cooling sensation perfectly highlights the balance achieved by melding a cooler, leaner style of Sangiovese with a more texturally dark and voluptuous Petite Verdot. A wine that checks off all the boxes for a great Italian style wine
On the nose, smoked blue fruits lead the way with a far note of charcoal in the air. It exudes the hallmark characteristics of Whitehawk Vineyard, with notes of black and white pepper peering through. Finished with a note of lavender pastille candy adding lift. On the palate, powerful with big, chewy tannins that are gripping and drying. The lavender pastille notes add a slightly dusty quality to counter the brighter fruit tones. This will be an excellent candidate for the cellar, and will only further benefit from allowing rest.
Joining together our favorite barrels of Cabernet, we fermented from Jada Vineyard & ONX Estate Vineyard. This wine reminds you of a Left Bank, Margaux with showing great California style body and mouthfeel. The two lots for this wine were harvested on October 5th and October 27th, 2020. Both lots were picked early, brough in cold, and destemmed directly to their respective tanks. The ONX lot was fermented in a stainless-steel tank with regular, long pumpovers for full extraction while the Denner lot was fermented in one-ton, open top tanks with punchdowns 2-3X per day. The lots were pressed to barrel after 20-22 days of skin contact and aged in new and used French oak barriques (66% new) for 19 months prior to racking and bottling.
Floral tones of violets gently waft from the glass, wrapping around the fruit and adding a layer of elegance. The palette exudes unctuous notes of cassis and pomegranate with a streak of dark fruit slicing through it, bolstered by a slightly spicy, savory herbaceous note that really drives the wine forward. The finish is pleasingly tannic with a slight bite and chew to the wine that adds gorgeous length to the finish.
